On a recent trip to Berlin I had the most incredible Tofu Scramble for breakfast from a cafe next door to our hotel. I’ve made plenty of tofu scramble at home but have always used firm tofu. But this one was made using silken tofu and it made me realise I’ve been missing out! Below is a great silken tofu scramble recipe plus a couple of other inventive vegan ‘egg’ options for your weekend breakfast. 🍳

Silken Tofu Scramble Soft or silken tofu lends a fluffy texture more similar to real scrambled eggs than the classic firm tofu.

Eggs Benedict Casserole Vegan egg casserole loaded with veggie goodness baked in one pan along with vegan “egg” made from blended tofu.

Fried Vegan Eggs They really do have that “eggy” taste and the texture of the egg white especially is spot on.
