Every time you spend money, you're casting a vote for the kind of world you want.

šŸ“° Whatā€™s Happening?

  • Nitrates from vegetables lower the risk of death from heart disease and cancer by 14-24%, converting into beneficial nitric oxide.

  • Nitrates and nitrites from animal products and processed meats increase all-cause and cardiovascular mortality risks by 9-29%, forming carcinogenic nitrosamines.

  • Nitrate-rich vegetables like leafy greens and beetroot support cardiovascular health and do not pose cancer risks.

  • Denmark has introduced a world-first carbon tax on agriculture to combat climate change, aiming to reduce agricultural emissions significantly.

  • The tax will incentivise farmers to adopt new technologies and practices, potentially shifting from animal to plant-based farming, though it may impact the income of Danish farms, increasing those with negative net income from 25% to 45%.

  • The reform is part of Denmark's broader strategy to achieve ambitious climate targets, though it faces political debate and concerns about the economic impact on the agricultural sector.

  • A new study shows that plant-based meats are better for heart health compared to traditional animal-based proteins due to their higher fibre content and lower saturated fatty acids.

  • Despite the debate over ultra-processed foods, the study finds that plant-based meat alternatives improve cardiovascular risk factors and cholesterol levels.

  • Even plant-based meats with high sodium have not been linked to higher blood pressure, unlike animal-based and processed meats.

  • The Bezos Center for Sustainable Protein has opened at Imperial College London, supported by a $30 million investment from the Bezos Earth Fund.

  • The Center will focus on developing and commercialising sustainable, nutritious, and affordable alternative food products through research in areas like cultivated meat, precision fermentation, and bioprocessing.

  • This initiative is part of a broader $1 billion commitment to food transformation by the Bezos Earth Fund, aiming to advance global food systems and promote a low-carbon economy.

  • A recent taste test involving 1,150 participants found that multiple plant-based chicken nuggets outperformed traditional meat-based ones in terms of flavour and texture.

  • The study, considered the largest public sensory analysis of its kind, highlighted that brands like Impossible Foods, MorningStar Farms, and Quorn were particularly preferred.

  • While the plant-based nuggets excelled in the taste test, there is still room for improvements with consumers generally wanting saltier, juicer, and greasier products.

 šŸ’§ Did You Know?

Switching to a vegan diet can significantly reduce your water footprint. It takes about 1,800 gallons of water to produce one pound of beef. In contrast, producing one pound of tofu requires about 300 gallons of water.

šŸ§‘ā€šŸ³ Whatā€™s Cooking?

I loved asian food before going vegan and if itā€™s possible I love it even more now. Thereā€™s just something about the style and flavour profiles that work incredibly well as vegan dishes. Hereā€™s 6 of my favourite asian style vegan dishes:

Sticky Orange Tofu This fresh and zesty take on the popular Chinese takeout classic is full of bright, citrusy flavour.

Sticky Ginger Tempeh with Coconut Rice This dish is a super flavourful and easy vegan dinner option. The tempeh is meaty and pairs really well with the coconut rice.

Tofu & Broccoli Stir Fry With an umami packed sauce the tofu makes a meal of a simple vegetable stir fry which can be a great way of using up any sorry looking vegetables in the fridge.

Singapore Noodles This is a super tasty simple noodle dish that's packed with flavour. It is low in FODMAP's, so easy on your digestion as well as being really tasty.

Teriyaki Tempeh This Teriyaki Tempeh is a stir-fry which means it's really quick to rustle up on the fly, making this the perfect dish for a speedy, satisfying, tasty fakeaway meal on a week-night.
